Aunty Dale Chapman is an Aboriginal Elder born in Dirranbandi in southwest Queensland - Yuwaalaraay and Kooma lands - and a resident of Sunshine Coast Gubbi Gubbi country since 1976. Regarded as a leader in her field, Aunty Dale is the founder of My Dilly Bag, a celebrated and award-winning chef, cookbook author, public speaker, television personality, YouTuber and lecturer. Aunty Dale is a qualified chef who has crafted culinary experiences from French to contemporary Australian cuisine in southeast Queensland for 35 years. She is passionate about sharing the oldest food in the world which takes her overseas to deliver keynote addresses, showcase flavours, explain nutritional and medicinal benefits, and teach key cooking techniques.

Chris Jordan

Chris has been in the Food Industry most of his working life mainly in the Sydney working under renowned chefs Peter Kuravita, Colin Fassindge and most recently Jock Zonfrillo. With his heritage and a love and respect for the earth Three Little Birds spreads a message of positivity and strives to conserve ancient knowledge. Chris’ goal is to work towards a more sustainable future by sharing his love for native food and tips in utilising and making the most of produce with a modern twist. He considers traditional food and knowledge to be an effective weapon in the fight against the environmental issues that Australia faces today.
